🛒 Ingredients (serves 4)
1 small cauliflower
100g smoked turkey bacon lardons
200ml light cream
1 tablespoon wholegrain mustard
80g grated cheese (Emmental, Comté, or a blend)
1 garlic clove
Salt, pepper
1 pinch of nutmeg

Start by preparing the cauliflower. Remove the leaves and cut it into small, evenly sized florets to ensure even cooking. Cook them in a large pot of boiling salted water for about 10 minutes. The cauliflower should be tender but still slightly firm: it will finish cooking in the oven. Drain it thoroughly and let it cool for a few minutes.

Meanwhile, prepare the bacon lardons. Heat a frying pan over medium heat without adding any fat.  Add the diced bacon and the finely minced garlic clove. Sauté until the bacon is golden brown and slightly crispy, releasing an irresistible aroma. Remove from the heat and set aside.

In a bowl, prepare the sauce that will bind the gratin. Mix the light cream with the whole-grain mustard. Add a little pepper, a pinch of nutmeg, and taste before adding a little salt (the bacon is already salty). This sauce should be smooth and well-balanced.
Preheat the oven to 190°C (375°F). Arrange the cauliflower florets in a lightly buttered gratin dish. Scatter the browned bacon over the top, then pour the sauce evenly so that it seeps between the florets. Sprinkle generously with grated cheese to create a beautiful golden crust.

Bake for about 25 minutes, until the top is nicely browned, crispy, and lightly golden, while the inside remains soft and creamy.
