Classic Irish Stew

Ingredients:

  • 2 lbs lamb stew meat, cut into chunks
  • 1½ lbs potatoes, peeled and cut into chunks
  • 3 carrots, sliced
  • 1 large onion, chopped
  • 3 cups beef or lamb broth
  • 2 tablespoons butter or oil
  • 2 tablespoons all-purpose flour
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Method:

  1. Heat the butter or oil in a large pot over medium-high heat. Season the lamb with salt and pepper, then brown it in batches.
  2. Add the onion and garlic. Cook for 3–4 minutes until softened.
  3. Sprinkle in the flour and stir well to coat the meat and vegetables.
  4. Slowly pour in the broth, stirring to prevent lumps.
  5. Add the potatoes, carrots, thyme, and rosemary. Bring to a gentle boil.
  6. Reduce the heat, cover, and simmer for 1½–2 hours, until the lamb is tender and the potatoes are cooked through.
  7. Taste and adjust the seasoning. Garnish with fresh parsley and serve hot with crusty bread
