Ingredients:
For the Biscuits:
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1 tsp salt
- ½ tsp baking soda
- 6 tbsp cold unsalted butter, cubed
- ¾ cup buttermilk
- 1 tbsp honey, optional
For Serving:
- 4 tbsp softened butter
- ½ cup strawberry, raspberry, or blackberry jam
Method:
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, baking powder, salt, and baking soda.
- Cut in the cold butter using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.
- Pour in the buttermilk and honey, if using. Stir gently until a soft dough forms. Do not overmix.
- Turn the dough onto a lightly floured surface and gently pat it to about ¾-inch thick. Fold the dough over itself 2–3 times for extra-flaky layers.
- Cut out biscuits using a round cutter and place them close together on the baking sheet.
- Bake for 12–15 minutes, until puffed and golden brown.
- Brush the hot biscuits with a little melted butter and let them cool for a few minutes.
- Split each biscuit open and spread generously with softened butter and your favorite jam.
- Serve warm with coffee, tea, or a cold glass of milk. 🧈🍓🍪✨
