Creamy Garlic Chicken (Diabetic-Friendly)
Ingredients:
6–8 boneless, skinless chicken thighs or breasts
2 tbsp olive oil
4 cloves garlic, minced
1 cup low-sodium chicken broth
1/2 cup plain Greek yogurt (or light cream)
1/4 cup grated Parmesan cheese
1 tsp paprika
1 tsp Italian seasoning
Salt and pepper to taste
1–2 cups spinach or broccoli (optional)
Fresh parsley (for garnish)
Base options (choose one):
Whole wheat pasta (about 1/2 cup cooked per serving)
Chickpea or lentil pasta
Zucchini noodles or spaghetti squash
Instructions:
Season chicken with salt, pepper, paprika, and Italian seasoning.
Heat olive oil in a pan over medium heat. Cook chicken until golden and fully cooked. Remove and set aside.
In the same pan, sauté garlic for about 1 minute.
Add chicken broth and let it simmer for 2–3 minutes.
Lower heat and stir in Greek yogurt and Parmesan cheese. Mix until smooth.
Add spinach or broccoli and cook until tender.
Return chicken to the pan and coat well with the sauce.
Serve over your chosen base and garnish with parsley.
Notes:
Keep heat low when adding yogurt to prevent curdling.
Watch portion sizes to help manage blood sugar.
Adding vegetables increases fiber and helps slow glucose absorption.
