Slow Cooker Potato Soup 🥔🧀🥓
Creamy, hearty potato soup made in the slow cooker with bacon and cheddar.

🍴 Ingredients:

_ 2 lbs potatoes (diced)

_ 4 cups chicken broth

_ 8 oz cream cheese (cubed)

_ 2 cups shredded cheddar cheese

_ ½ cup bacon bits

_ 1 onion (diced)

_ 2 cloves garlic (minced)

_ ½ tsp salt

_ ½ tsp black pepper

_ ½ tsp paprika

_ 2 green onions (sliced, for garnish)

👩🏽‍🍳 Instructions:

1_ In a silver slow cooker, combine the potatoes, chicken broth, onion, garlic, salt, pepper, and paprika.

2_ Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours.

3_ Add the cream cheese and stir until melted.

4_ Stir in the cheddar cheese and bacon bits.

5_ Serve in a white bowl.

6_ Garnish with green onions and extra bacon.

📝 Notes: Use any potatoes or cheese. Add extra broth for a thinner soup. Store leftovers in the fridge for up to 5 days. Reheat in the microwave or on the stovetop.
